However, for example, instead of serving traditional fermented foods as they are, we will use our ingenuity to make customers excited to see, hear, and eat, such as "Huh? Does this have miso in it?" "It's such a beautiful color, it's not brown, but is it fermented?" "It can be made like this Western style?" "Why is it sweet even though it doesn't use sugar?" We opened in March 2025 with the aim of making it such a restaurant. Cafe Ashita mo Fermented Food Nippon was started by the owner of Fermentation Life Advisor PRO., whose life changed when he encountered fermentation, with the desire to convey the deliciousness, fun, and interest of fermentation to many people and to connect it to the next generation. The food will be supervised by Maki Koretomo, representative director of the Fermentation Life Promotion Association and cooking researcher.
