Vegetables are sourced from various organic producers, including Yoshio Asano of Chef's Garden Eco Farm Asano in Yachimata City, Chiba Prefecture, who is known as a legend of pesticide-free vegetables.

Among the course meals, the "vegan cheese platter" made with soy milk combined with green laver, dried fruits, herbs, etc. is a popular menu item. And the specialty is, of course, "vegetable sushi". "The vegetarian sushi is better than any other sushi restaurant produced by Sushi Kappo. It has been well-received for being better than expected.
