We discovered the joy of traditional Japanese food while working at a Japanese restaurant in New York City.
We were there for 18 years.
Now we want to revive naturally fermented food in Japan, which is why we only use authentic and traditional seasonings like KOJI-malt; they're indispensable to Japanese cuisine.
