AQUAMO salad

Opening in February 2026, this restaurant specializes in salad bowls featuring vegetables grown using the environmentally friendly, recycling-based "aquaponics" farming method. They use fresh, pesticide-, herbicide-, and chemical fertilizer-free vegetables, delivered directly from their own farm in Fujisawa City, Kanagawa Prefecture. AQUAMO's vegetables grow under the watchful eye of fish and microorganisms. Water circulates, life circulates, and the process is reminiscent of the Earth's ecosystem. These hearty salads feature vegetables that have fully absorbed the bounty of the "small Earth" known as aquaponics. The salad bowls are filled with vegetables cut to preserve their natural flavor, giving you the freedom to bite into them whole. Eat them because they're delicious, which ultimately makes them better for the environment. We deliver this "feel-good food" in our salad bowls. We offer a total of 10 salads, three of which are plant-based.
