ITOSHO is a one-Michelin-starred shojin ryori (a type of vegetarian cuisine practiced by Buddhist monks) restaurant. The owner founded the establishment 33 years ago after his 25-year career at Kakusho, a traditional Japanese fine dining establishment which has been in operation since the Edo period (1603 - 1868) in Hida-Takayama. Many of the raw ingredients are sourced from Hida-Takayama. Our cuisines did not originate from the temples, but our dishes are prepared free of plant-based protein and with great use of the bounties of the mountains and the fields of Hida-Takayama. It is literally the experience of 'eating the earth.' We offer meals that are filling and satisfying even for those with big appetites.
